Italian Beef Sandwiches – a delicious 3-ingredient crockpot meal that is so simple to make and only needs 3 ingredients to make. It is the perfect slow cooker meal for those busy weeknights and is sure to become a family favorite!
Wow-oh-wow! Fall in Montana went from, “Are we sure it’s September and not July?” to “Holy crap! 30 degrees and rain this morning?!?! I was just kidding, it can be 80 degrees again!” Note to self: do not question the motives of Mother Nature. She will punish you by making you cold for the next 7 months!
Regardless of what the weather is doing, with Fall, comes Fall soccer season and since this is my first time being an authentic soccer mom, I was struggling to figure out my new schedule. Since practices and games, take place during the time I would normally be getting dinner ready, it feels like my choices are: leftovers, frozen pizza or crockpot meals.
“What could I make that’s super easy that I can just toss in the crockpot and forget about it until dinner time?” I know, I know. There’s a lot of things, but I’ll be honest, I haven’t experimented with my crockpot as much as I should have by this point in my life. *I’ll work on that!* BUT there is one thing that I do make that, I guarantee you would have a tough time beating on the combination of easiness + deliciousness scale.
I got this magical meal idea from my mother-in-law who, when I first met, I was pretty sure was Martha Stewart based on her kitchen skills. *Thank you Mary!* It only takes 3 ingredients (counting the bread)*gasp!*and, yields incredible flavor. What am I talking about? Well, it is little dish called Italian Beef and it will change your life for a few reasons. #1: It proves that you don’t necessarily need tons of ingredients to create a flavorful meal. #2: Having a 3-ingredient meal idea in your food prep arsenal can never hurt. And #3: If you’ve never had an Italian Beef, you will likely start to question many of your other life choices.
I swear, the hardest part about the meal prep for this version of Italian Beef, is opening the jar of peperoncinis! I know what you might be thinking, if you’ve ever opened a jar of peperoncinis, you know just how strong they smell. Fear not, your meal will not taste like one big mouthful of peperoncinis, just trust me on this, I had the same fears. But, when their juices slow-cook with the juices from the meat, they create a slightly-spicy flavor that is sure to be a crowd-pleaser!
Alright so, a couple things before we get right into this oh-so-easy Italian Beef recipe. For the meat, I usually use whatever cut of roast I have stocked in my freezer which is usually Chuck Roast, on this last batch, I wanted to see how a Rump Roast would work especially since that’s all I had and it turned out just as fantastic and tender. One thing I did differently this time was flipped the meat so that both sides would soak in the juices and I will recommend the same to you but it is totally optional. Ok, so let’s get right to this VERY short process!
- 2 ½ -3 ½ lb Chuck or Rump Roast
- 1 16 oz Jar Peperoncinis I use Mezzetta Brand Deli-Sliced Golden Greek
- 6-8 Hoagie Sandwich Buns of choice My favorite are Italian-style
With the crockpot set on low, place roast in crockpot with fat side up.
Pour entire contents of Peperoncini jar over the roast and cook on low for 6-8 hours (the longer, the better!). Pro Tip: Flip the roast halfway through cooking to get entire roast soaking in those juices!
When the roast is fork tender, shred using two forks or your preferred method and serve on buns and enjoy!
