Baked Mozzarella Stuffed Meatballs are always one of the stars of those nights that my husband and I decide to do an appetizer night. Appetizer nights, in case you were wondering, are our version of a date night because since we live in the backwoods of Montana, finding a babysitter is a challenge! This is why we’ve learned to improvise and, after feeding the kids and setting them up with a movie, we each choose a special appetizer idea (or two) and create it with each other while listening to a little music and having a little vino, or in his case, beer. But enough about that…
I have played with this meatball recipe a lot over the years, experimenting with different meat combinations trying to find that happy medium with all of the different personal tastes in our family. I grew up in the Midwest where hamburger was a staple meat so I have done these little meaty balls of goodness with only hamburger before which does require a little more seasoning. I have also experimented with both, spicy and regular Italian sausage as preferred by the husband. But in the end, I decided to combine a little of both hamburger and regular Italian sausage which is what this recipe reflects. Ultimately, whatever meat combination you choose, you are sure to be pleased with the results.
The recipe for these meatballs makes about 2 dozen making it perfect for when having guests and you need an easy, but satisfying appetizer/meal. If 2 dozen sounds like too much, you can always freeze half of the meat mixture to save for later or, you can easily halve the ingredients to just make a dozen. Whatever you decide, just make sure you have some warm marinara sauce to dip these babies into and enjoy these juicy, oozing-with-cheese balls of goodness! Baked Mozzarella Stuffed Meatballs
- 1 lb Regular Italian Sausage
- 1 lb Ground Beef
- 2 Cloves Garlic Minced
- 2 Eggs
- 1 tsp Onion Powder
- ½ tsp Salt
- ½ tsp Black Pepper
- 1 tsp Oregano
- ½ Rosemary
- 1 ½ C Italian Bread Crumbs
- 6-8 Mozzarella Cheese Sticks Cut into 1/2" Pieces
Dipping & Garnishment
- 1 Jar Marinara Sauce or homemade if preferred
- Parmesan Cheese for garnishment I use the dehydrated sprinkle kind
Preheat oven to 400°F
Mix by hand, all ingredients, except for your cheeses and marinara sauce, into a large bowl until well incorporated.
Next, separate your meat mixture into individual meatballs about the size of a golf ball and lay out on a cookie sheet about an inch away from each other. Pro Tip: Line your cookie sheet with foil to save on dishes for later!
Cut your cheese sticks into about ½ inch sized pieces and then insert 1 piece of cheese per ball, reforming the meat around the cheese as you go.
Bake your meatballs about 10-15 minutes or until starting to lightly brown on the bottom.
Optional Step: Pull the pan out of the oven and lightly sprinkle your meatballs with Parmesan Cheese and place the pan back in the oven for 1-2 minutes.
Next, pull your pan out, and serve immediately. Eat with marinara dipping sauce as an appetizer or paired with spaghetti as a meal! Enjoy!
