Oatmeal Peanut Butter Chocolate Chip Cookie Bars…need I say more? I don’t know of too many treats on this beautiful planet that are as comforting as fresh, warm chocolate chip cookies. They are one of those things that bring back memories of childhood and come to think of it, were actually one of the first things I ever remember baking from scratch when I was a kid.
With these Oatmeal Peanut Butter Chocolate Chip Cookie Bars (Wow! that’s a mouth full! – pun intended!) you get all of those comforting flavors that you remember from your childhood but with unmatched-by-any-cookie simplicity. As you all probably know by now, I am a big fan of simple dishes especially desserts (like my Apple Pie Tartlets).
Developing a recipe for these little guys has been a dream of mine for some time but I just couldn’t seem to get them on my kitchen schedule. All of this was until yesterday when I was craving warm chocolate chip cookies but didn’t want the hassle (although minimal) of separating out cookie dough, baking batch after batch and willing myself not to eat all of, said cookie dough. You know, first-world problems.
This is where the idea of making cookie bars instead, came in because you alleviate that so-called hassle that inherently comes with making cookies. Just whip up your dough, toss them in a greased pan, bake and enjoy! Yup, that simple!
As you can probably imagine, this concept will make it easy for, say, that bake sale you forgot about or that potluck that you signed up as bringing a dessert for. Of course, it’s also just as good for those times that you are just plain craving oatmeal peanut butter chocolate chip cookies and NEED them in your mouth in a hurry. Not speaking from experience or anything…

Oatmeal Peanut Butter Chocolate Chip Cookie Bars
Oatmeal Peanut Butter Chocolate Chip Cookie Bars – Chewy and deliciously simple cookie bars with peanut butter, oatmeal and melty chocolate chips. Get the flavorful experience of cookies without the hassle.
- ¼ C Peanut Butter
- ¾ C Butter Softened
- 2/3 C Brown Sugar
- 1 C White Sugar
- 1 ½ tsp Vanilla
- 1 tsp Almond Extract
- 2 Eggs
- 1 ½ C Oatmeal Quick Oats
- 1 ½ C All-Purpose Flour
- 1 ¼ tsp Salt
- 1 tsp Baking Soda
- 1 ½ C Chocolate Chip Semi Sweet
Preheat the oven to 350°F
Prepare a 9x13 pan by greasing and flouring the bottom and sides.
In a large bowl or mixer mix butter, peanut butter, sugars and extracts together until creamy. Scrape sides of bowl and mix in eggs for 1 minute on medium speed.
In a separate large bowl, mix oatmeal, flour, salt and baking soda.
Add dry mixture (half at a time) to butter/sugar mixture, mixing well and scraping sides of the bowl between each addition. Add chocolate chips.
Evenly spread cookie dough into pan and bake for 30-35 minutes. Let cool and Enjoy!
