Before I begin, I just want to say that I have had to take a step back from writing lately to tend to some family issues in Nebraska and, while I have been back for a few weeks, it has taken me nearly a month to feel motivated and inspired again.
My family recently lost my grandfather who, I could go on all day about how I hope to be as genuinely good and straightforward of a person as him. Instead, I want to honor him in a way that he would really appreciate: Food! And not just any food, but SWEETS!
You see, when I was visiting him this summer, I would bring him new treats each time and we would share them and our mutual love for sweet treats while talking about everything from life in Montana to how he used to hose my cousin and I down when we would get in the mud on the farm (see him in action above).
But, one of the last treats I brought him were Pumpkin Cake Bars and I decided right then and there that I would create a personal recipe in his honor. And so, these Pumpkin Bars were born!
Since developing the recipe for these Pumpkin Bars a couple of weeks ago, I have already made them a total of three times! I guess you could say that they are a hit with the family. They are truly the perfect holiday dessert or Fall treat (even though I know it’s almost winter!) and since they are basically a pumpkin cake but slightly denser, they are most definitely shareable.

Eat these babies by themselves or topped off with the cream cheese frosting I have added or whipped cream. The choice is yours!
As usual, I have made this to be a very easy dessert recipe so when they mysteriously disappear from the pan as desserts often do in my house, never fear because a new batch can be whipped up in a flash!

Pumpkin Bars – Soft, moist and flavorful Pumpkin Cake Bars that have all of the spiced flavor of pumpkin pie in sheet cake style finished off with a soft and delicious cream cheese frosting.
- 2 C Flour
- 2 tsp Baking Powder
- 2 TBS Pumpkin Pie Spice
- ½ tsp Salt
- 1 C Butter Softened
- 1 15 oz Can Pumpkin Puree
- 3 Eggs
- 2 C Sugar
- 1 tsp Vanilla Extract
Cream Cheese Frosting
- 1 8 oz Package Cream Cheese softened
- 3 C Powdered Sugar
- 1 tsp Vanilla
Preheat the oven to 350°F.
Grease and flour a 9x13” pan and set aside.
In a medium bowl, combine flour, baking powder, pumpkin pie spice, salt. Set aside.
In a large mixing bowl, cream together softened butter and sugar. Add vanilla and eggs, scraping the sides of the bowl periodically. Mix in pumpkin puree.
Finally, add the dry mixture to the wet mixture, half at a time, mixing well and scraping the bowl as needed until all ingredients are well incorporated.
Pour mixture evenly into the prepared 9x13” pan and bake for 35-40 minutes.
Cream Cheese Frosting
While the pumpkin bars are baking, mix together the frosting ingredients and top the pumpkin bars with it after they have cooled.
