Apple Pie Tartlets

Ingredients

Tartlets

  • 2 Premade Uncooked Pie Crusts I used store bought
  • 2 Medium Granny Smith Apples peeled & diced
  • 2 TBL Butter
  • 2 TBL Brown Sugar
  • 2 TBL White Sugar
  • 1/8 tsp Almond Extract
  • ¼ tsp Vanilla
  • ½ tsp Cinnamon
  • 1 Dash Ground Nutmeg about 1/16 tsp
  • 1 Dash Ground Cloves about 1/16 tsp
  • 1/8 tsp Lemon Juice

Topping

  • ½ C. Dry Oatmeal
  • 2 Graham Crackers
  • ¼ C. Brown Sugar
  • ¼ tsp Salt

Instructions

Topping

  1. In a food processor or blender, add each of the topping ingredients, one at a time. Blend until there are no more chunks of graham crackers and the ingredients blend well together. Set Aside.

Tartlets

  1. Preheat the oven to 400°F
  2. Peel, core and dice both apples which should give you about 3 cups. Put in a medium bowl and set aside.
  3. In a small sauce pan, melt butter and add the sugars, lemon juice and spices one at a time stirring frequently. When everything is well incorporated, pour over apples in the bowl and mix until the apples are well-coated in the mixture. Set aside.
  4. Roll out 2 pie crusts and use a mason jar lid (or something of similar size) to cut the tartlet crusts to the size of the cups of a cupcake pan. Before placing the crusts into the pan’s cups, cut strips of parchment paper and place one in each cup but be sure to make them long enough to be able to grab them on each end. This makes it super easy to get the tartlets out of the pan since they just lift right up.
  5. Place the crusts into the cups and spoon the pie filling into the crusts. Only fill them as high as the edges of the crust which isn’t very much.
  6. Spoon the graham cracker topping onto each tartlet. I used about 1 teaspoon for each but use as little or as much as you would like! You will likely have leftover topping but it goes great on a lot of things. I like to put it on my yogurt but you do as you please!
  7. Bake for 15-20 minutes. The Apple Pie Tartlets are little so start low on time and move up from there to avoid burning these little guys.
  8. Enjoy with ice cream, coffee or just by themselves!
