Pumpkin Bars – Soft, moist and flavorful Pumpkin Cake Bars that have all of the spiced flavor of pumpkin pie in sheet cake style finished off with a soft and delicious cream cheese frosting.

Ingredients

Pumpkin Bars

  • 2 C Flour
  • 2 tsp Baking Powder
  • 2 TBS Pumpkin Pie Spice
  • ½ tsp Salt
  • 1 C Butter Softened
  • 1 15 oz Can Pumpkin Puree
  • 3 Eggs
  • 2 C Sugar
  • 1 tsp Vanilla Extract

Cream Cheese Frosting

  • 1 8 oz Package Cream Cheese softened
  • 3 C Powdered Sugar
  • 1 tsp Vanilla

Instructions

Pumpkin Bars

  1. Preheat the oven to 350°F.
  2. Grease and flour a 9x13” pan and set aside.
  3. In a medium bowl, combine flour, baking powder, pumpkin pie spice, salt. Set aside.
  4. In a large mixing bowl, cream together softened butter and sugar. Add vanilla and eggs, scraping the sides of the bowl periodically. Mix in pumpkin puree.
  5. Finally, add the dry mixture to the wet mixture, half at a time, mixing well and scraping the bowl as needed until all ingredients are well incorporated.
  6. Pour mixture evenly into the prepared 9x13” pan and bake for 35-40 minutes.

Cream Cheese Frosting

  1. While the pumpkin bars are baking, mix together the frosting ingredients and top the pumpkin bars with it after they have cooled.
  2. Enjoy!
